Bananas on skewers with the local name ‘banana cue’ are a popular snack for young and old. Here we have delighted some children with the ‘Banana Cue’. Ripe ‘saba’ bananas, which are the local plantains, are used for the bananas. They are deep fried in hot oil with brown sugar and then put on bamboo skewers.
This process of deep frying takes advantage of the fact that the brown sugar does not mix with the oil, but caramelises due to the heat, adhering to the surface of the bananas.
